Chocolate & Cookie Cups: My Favourite No-Bake Vegan Cacao Dessert

If you’re like me and sometimes crave a sweet treat that doesn’t require a lot of effort, save this recipe – you’ll be making it more than once! These chocolate & cookie cups are my quick, gluten-free take on a vegan cacao dessert that’s seriously delicious (and looks so cute served in little jars!).

The magic? It’s all about combining Ecomil’s Dark Cacao Dessert – rich, creamy and deeply chocolatey – with gluten-free oat cookies spiced with ginger and cinnamon. And of course, a splash of plant-based milk with a touch of cinnamon to tie it all together.

Ingredients for vegan chocolate & cookie dessert

• 2 tubs of Ecomil Dark Cacao Dessert

• 8 gluten-free oat cookies (I use ones with ginger and cinnamon – so good!)

• A splash of Ecomil Coconut Drink (Coco Nature, No Sugar)

• A pinch of ground cinnamon

How to make it

  1. Mix a little plant-based milk with the cinnamon.
  2. Lightly dip the cookies in the mixture (don’t soak them too much – they should stay whole).
  3. Now layer it up:▫️ cookie▫️ chocolate layer▫️ another cookie▫️ more chocolate▫️ and finally, a whole cookie on top to finish.
  4. Chill in the fridge for at least 30 minutes to set (if you can wait that long!).
