Tofu Stroganoff
INGREDIENTS (for 2 servings):
- 200 g of pasta
- 100 g of tofu, cut into thin strips
- 100 g of mushrooms, thinly sliced
- ½ red onion, thinly sliced
- 100 ml of EcoMil Cashew Cuisine
- Fresh thyme
- Salt, black pepper
Instructions:
- Cook the pasta, following the instructions on the package. Meanwhile, in a hot pan with some olive oil, start by cooking the mushrooms and onions. Cook them for 3 minutes and then add the tofu
- Now season with salt and pepper and cook until the tofu has a golden-brown colour, that should take another 3 minutes.
- When that’s ready, add in the Cashew Cuisine and the fresh thyme. Let it simmer for about 1-2 minutes and take off the heat
- Serve over the cooked pasta and enjoy!
