Tofu Stroganoff

INGREDIENTS (for 2 servings):

  • 200 g of pasta
  • 100 g of tofu, cut into thin strips
  • 100 g of mushrooms, thinly sliced
  • ½ red onion, thinly sliced
  • 100 ml of EcoMil Cashew Cuisine
  • Fresh thyme
  • Salt, black pepper


  1. Cook the pasta, following the instructions on the package. Meanwhile, in a hot pan with some olive oil, start by cooking the mushrooms and onions. Cook them for 3 minutes and then add the tofu
  2. Now season with salt and pepper and cook until the tofu has a golden-brown colour, that should take another 3 minutes.
  3. When that’s ready, add in the Cashew Cuisine and the fresh thyme. Let it simmer for about 1-2 minutes and take off the heat
  4. Serve over the cooked pasta and enjoy!
