Almond cake with plant-based cream

We start October with a homemade almond cake, perfect for family snacks and cozy autumn afternoons. This recipe is easy to make, wonderfully moist and full of natural almond flavor. Thanks to the combination of flours and the use of almond-based plant cream, the texture is soft and tender, making it a cake everyone will love.

For this recipe, we use Ecomil Almond Cuisine, a plant-based cream that adds extra creaminess and a delicious almond taste. If you want a fully vegan version, you can easily replace the eggs with ground flaxseeds mixed with water.

  • 1 tablespoon almond butter
  • 1/2 cup chopped almonds
  • 1 cup buckwheat flour

Step-by-step preparation

Start by whisking the eggs with the erythritol until light and slightly fluffy. Add the almond plant cream, coconut oil and almond butter, mixing well until fully combined.

Add the flours and baking powder, stirring gently until you get a smooth batter. Fold in the chopped almonds and pour the mixture into a greased cake tin.

Bake at 180 °C for 30 to 35 minutes. Once baked, remove from the oven, let it cool on a rack and carefully unmold.

The result is a moist almond cake with a pure almond flavor, perfect for coffee breaks, tea time or a healthy family snack.
