Zucchini Zoodles with Alfredo Sauce

Do you know the Alfredo sauce for pasta? It is one of the most famous sauces in the world of

Italian cuisine. Originally it contains cheese, crème fraiche and butter, thanks to these ingredients we get a super creamy texture and cheese flavour.

We wanted to make our own vegan version and for that what?

Which Ingredients?  If you’re a fan of vegan cheese you already hear about the

nutritional yeast combined with cashew nuts, right?

Ingredients for Alfredo Sauce

½ cup NaturGreen Cashew nut cream

2 tablespoons Cuisine Cashew Ecomil

Juice of half a lemon

2 cloves roasted garlic or 1 raw finely chopped

½ cup of water

1 tablespoon dried thyme

1 tablespoon nutritional yeast

Salt and pepper to taste

Zoodles

1 zucchini

Roasted cherry tomatoes

Salt and pepper to taste

Olive oil

Preparation

  1. Roasted garlic gives it a spectacular flavour to the sauce, so if you’re going to roast vegetables takes advantage of it and includes a whole clove of garlic. If not, heat a frying pan with a little oil and add the pieces of your garlic clove until it is cooked.
  2. To make this delicious and easy sauce we just have to add all the ingredients to your mixer or kitchen robot and grind. Le it cool
  3. Wash zucchini and cherry tomatoes well. Cut off the ends of the zucchini and help you with a spiralizer to turn your zucchini into zoodles. If you don´t have it you can use a mandolin and make very thin strips
  4. Heat a frying pan with a little oil over medium heat, then add the tomatoes for about 5 minutes, then add the zucchini, add a little more oil, salt and pepper to taste. Continue to cook 5 minutes, try not to cook them too long for them to be “al dente”.
  1. Pour the zoodles on your plate and add your Alfredo sauce!
