Vegan oatmeal pancakes

Today, Beatriz Moliz @beatrizmoliz shares with us this recipe of vegan pancakes she has made with Ecomil quinoa drink. There is no better way than to start the day with a good and delicious breakfast.

Having different options on hand is the best way to make a perfect and complete breakfast… That’s why we offer you this delicious recipe of oatmeal vegan pancakes and quinoa milk. A very simple recipe, full of plant proteins.

You can taste them with fruit or homemade jam.

Ingredients

  • 200 grams of Naturgreen full oatmeal
  • 2 cups of Ecomil quinoa drink
  • 1 teaspoon of yeast
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons NaturGreen agave syrup
  • 1 teaspoon of vanilla extract
  • Naturgreen Extra Virgin Coconut Oil

Preparation

1.Mix all the ingredients except the quinoa drink and mix them all.

2.Add the quinoa drink gradually, if you see that with two cups, the mixture is too dense, add more to obtain a liquid mixture which is suitable for pancakes (it should not be pasty).

3.Use an anti-adhesive frying pan. Heat it over high heat. Pour in a tablespoon of coconut oil to grease it. When it is hot, lower to medium-high heat.

4.Pour a few tablespoons of the mixture and turn the pan until you cover it all. Cook until mixture starts to darken.

5.Help yourself with a plate or a lid to turn the pancake on the other side.

6.Regrease the pan a little and repeat the process until you finish the whole dough. The pancakes can be refrigerated for 3 to 4 days, you can even put them in the freezer! * This way, you can eat some whenever you want.

 

* If you want to freeze the pancakes, let them cool and separate them with parchment paper.
