Thai-Style White Bean Peanut Dip
INGREDIENTS
- 200g (half a tin) white beans
- 1 tablespoon peanut butter
- 150ml Ecomil Cuisine Thai
- Juice and zest from half a lime
- 1/4 teaspoon chilli powder
- Salt to taste
For the crispy peanut topping:
- 1/4 cup roasted peanuts
- 1 teaspoon agave syrup
- 1/8-1/4 teaspoon chilli powder
- 1 teaspoon olive oil
To garnish: fresh lemongrass
INSTRUCTIONS
- To make the dip, blend all the ingredients together until smooth.
- Set aside to chill while you prepare the topping.
- For the topping, chop the peanuts into smaller pieces.
- Heat some olive oil in a pan, and when it’s warm, add all of the ingredients and heat on low for 3-4 minutes until golden, stirring often.
