Thai-Style White Bean Peanut Dip


  • 200g (half a tin) white beans
  • 1 tablespoon peanut butter
  • 150ml Ecomil Cuisine Thai
  • Juice and zest from half a lime
  • 1/4 teaspoon chilli powder
  • Salt to taste

For the crispy peanut topping:

  • 1/4 cup roasted peanuts
  • 1 teaspoon agave syrup
  • 1/8-1/4 teaspoon chilli powder
  • 1 teaspoon olive oil

To garnish: fresh lemongrass


  1. To make the dip, blend all the ingredients together until smooth.
  2. Set aside to chill while you prepare the topping.
  3. For the topping, chop the peanuts into smaller pieces.
  4. Heat some olive oil in a pan, and when it’s warm, add all of the ingredients and heat on low for 3-4 minutes until golden, stirring often.
