Today we share with you this delicious Thai red lentil soup recipe from @mlleprune_vegan. Enjoy!

Ingredients for 4:
800ml vegetable broth
200ml Ecomil Thai cooking cream
160g red lentils
1 yellow onion
2 garlic cloves
1 stick of lemongrass
1 pinch of salt
1.In a large pan, heat the sunflower oil then add the finely chopped onions. Sauté the onions until tender. Add the crushed garlic cloves and then the red lentils.
2.Pour the vegetable broth, stir and let the lentils cook over medium heat for about12 min.
3.At the end of cooking, add the Ecomil Thai coconut cream, and some salt if necessary.
4.Meanwhile, toast some cashews in a stove.
5.At serving time, pour the soup in bowls, add some toasted cashews and some fresh lemongrass rings.
