Thai coconut bento box

Ingredients
- Veggies of your choice (carrots, onions, green beans, mushrooms)
- 200 ml Ecomil Thai coconut cooking cream
- 1 tsRed Thai curry paste
- Olive oil
- Spinach
- Cashew
- Tofu
- Broccoli
- Rice
Preparation
1.Add freshly the cut veggies to a non-stick pan (carrots, onions, green beans, even mushrooms)
2.Heat on high heat with a touch of olive oil & stir frequently
3.Add a tsp of red Thai curry paste for extra spice and mix well
4.After 4 min, add Ecomil Thai cooking cream
5.Boil on medium heat for 20 min
6.Add a spoonful of spinach when you turn off the heat and stir
7.Add tofu, a side of brown rice or noodles & some raw cashews
