Summer curry soup, red pepper, tomato, basil

Ingredients

– 1/4 white, yellow or new onion

– 1 clove of garlic, degermed (optional)

– 1 red pepper

– 1 tomato

– 125ml Ecomil Cuisine India

– 4 basil or coriander leaves

– 1 pinch of salt

– 1 tbsp olive oil

 

Method

– Preheat the oven to 190C

– Wash your pepper, put it on baking paper on a plate and bake for about 25mins, depending on the size of the pepper

– Once cooked, allow to cool and then remove the skin and seeds inside

– Rinse your tomato, and cut it into small pieces

– Then peel and slice your onion (garlic too)

– Add the above ingredients to your blender and blend until smooth.

– A second option to amplify the flavours would be to sweat the onion, garlic, tomatoes with Ecomil Cuisine India before blending everything in the blender

– Cool in a cool place or reheat and enjoy
