Recipe: Curry rice and vegetables with EcoMil cuisine coconut milk
Today there are no almonds on the menu but curry rice and vegetables with EcoMil cuisine coconut milk for two persons:
Ingredients:
1 EcoMil cuisine coconut bio Tetra brik (200 ml)
1 onion, 1 zucchini, 1 pepper, 2 carrots,
80 g of rice,
Coconut oil, 2 teaspoons of curry, salt and pepper, and others seasonings of your choice
Preparation:
Wash and cut the vegetables, and cook the rice
Heat the coconut oil in the wok pan
Add the onion ( low heat)
Add the carrots and the pepper with curry (increase the heat)
Then, the zucchini a few minutes later.
After 5-6 minutes, add the EcoMil cuisine coconut bio .
Stir until well mixed and season
Serve vegetables and rice mixed or separated.
Obviously, you can adapt this recipe: changing rice by potatoes, or adding turnip or eggplants for example.
