Raw vegan cheesecake bars
Delicious raw vegan bars flavored with cheesecake and almond caramel. Learn how to prepare your own snacks without the need for an oven. These bars are perfect for the summer and to share with your friends and family.
Ingredients for the base:
1 ½ cup almonds
½ cup pure cocoa
2 ½ date cups
Ingredients for the cheesecake filling:
2 cups cashew nuts, soaked
1/2 cup Ecomil Cuisine crème anglaise custard
2 tablespoons agave syrup
A pinch of salt
3 tablespoons coconut oil
1 vanilla pod
1 tablespoon lime juice
Caramel:
2 tablespoons coconut oil
2 tablespoons agave syrup
2 tablespoons almond cream
1 teaspoon vanilla
How to prepare the base:
- Crush the almonds in your processor until you obtain almond powder. Then add the pure cocoa and finally the dates.
- Pass the base to a pot and crush it with your hands. Put it in the fridge while you prepare the rest of the layers.
How to prepare the filling and caramel:
- First we are going to prepare the caramel, add all the ingredients to a saucepan on low heat until blended. Then let cool the caramel.
- For the cheesecake filling you have to have the cashew nuts soaked from the night before. The next day first add the cashew nuts to your processor until you get a paste. Then add the rest of the ingredients until you have a homogeneous dough. Check the flavor and pour the filling over your base.
- Now pour the caramel (previously cooled) over the base of the bars. Cover your mold and freeze for a few hours before cutting the bars.
