Vegan Christmas tree muffins

Ylenia @ygastroeat made these vegan Christmas tree muffins with Ecomil cashew drink. Recipe below.

Ingredients 

– 70 gr of oatmeal

– 30 gr ground almonds

– 10 gr of yeast

– 25 g of golden flax seeds

– 200 ml Ecomil cashew drink

– 60 gr of soy “yogurt”

– 1 kiwi

– 1-2 bags of Matcha tea

– Optional: stevia

* The flour can be substituted by any other type of flour such as legumes, quinoa, coconut …

 

Steps 

  1. First, preheat the oven to 180 ° C with heat up and down.

Soak the golden flax seeds in the Ecomil cashew drink for about 15 minutes.

  1. Next, introduce all the ingredients into the blender jar and blend it until you get a homogeneous texture.
  2. Pass the mixture to the moulds previously greased with a little oil and bake for 10 min at 180° C (baking time can vary following the type of oven).
