1 aubergine
Pinch of salt
Extra virgin olive oil
Cuisine Pesto Verde Ecomil
1 handful cherry tomatoes
1 handful black olives (pitted)
2 handfuls vegan grated cheese


  1. Preheat the oven to 200ºC
  2. Wash the aubergine and remove the green part. Cut it into one centimetre thick slices and place them on a baking tray lined with baking paper.
  3. Add a little salt and olive oil and bake in the oven for 15 minutes.
  4. While the aubergine is in the oven, chop the cherry tomatoes and olives.
  5. When the aubergine is ready, take it out of the oven and add the pesto sauce, cherry tomatoes, olives, grated cheese and a little oregano on each slice.
  6. Bake for another 10 minutes.
