Creamy Garlic Cashew Shiitake Gnocchi

Ingredients
- 300 grams gnocchi
- 250 grams shiitake mushrooms
- 1/2 a medium onion
- 2 garlic cloves
- 300 grams Ecomil cashew cooking cream
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground rainbow pepper (black, red & white pepper)
- 1 tbsp. extra virgin olive oil
- Salt to taste
Instructions
- Cook gnocchi according to instructions on the packaging.
- Heat some oil in a pan and when it’s warm, add minced garlic and onion, plus sliced shiitakes. Sautee until fragant and golden, for about 4-5 minutes.
- Now, add the cooked gnocchi and sautee for 3-4 minutes or until golden and crispy.
- Add in the Ecomil cashew cooking cream and spices and let mixture simmer for 4-5 minutes or until creamy.
