Coconut Cacao Vegan Cookies - Ecomil

  • 100g coconut oil melted
  • 100g coconut sugar (or dark moscovado sugar)
  • 1 tablespoon agave syrup
  • 1 tea spoon cinnamon
  • 90g coconut flour
  • 90g self raising flour
  • 25g coconut flakes
  • 2cm chopped root ginger
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon cacao powder
  • 20ml sugar free coconut milk
1. Preheat the oven to 175 C (GAS MARK 4)
2. Cream the coconut oil and sugar (you can use an electric beater)
3. Beat in the agave
4. Add the dry ingredients, then add the milk and mix into a soft dough. If its too sticky add a little bit more flour.
5. Roll about a teaspoon of dough into a ball
6. Place on a greased baking tray
7. Bake for 10-15 mins. When golden brown the biscuits are ready
8. Remove from the oven
9. Leave to cool
10. Enjoy!
