Ingredients for the Chunky banana coconut pancakes with chocolate sauce:

  • 1 cup raspberries
  • 1 teaspoon desiccated coconut

 

Instructions:

Pancakes

  1. Blend the oats into an oat flour for 30 seconds or until a powder like texture is achieved
  2. Blend the oat flour with the coconut milk and 1 banana for around 1 minute to form the pancake batter
  3. Chop 1/2 banana into small chunks and mix into the pancake batter
  4. Place a frying pan onto the hob and spray with some vegan cooking spray, then spoon the pancake batter into circles, flipping after around 2 minutes (ingredient quantities given should make 4 small pancakes)

Sauce

  1. Blend the cacao powder, brown rice syrup, banana and coconut milk for 30 seconds to create chocolate sauce

Serve

  1. Dice raspberries into small chunks
  2. Stack the pancakes with the diced raspberries in between
  3. Drizzle chocolate sauce and sprinkle desiccated coconut on top of the pancake stack
  4. ENJOY!
