Chunky banana coconut pancakes with chocolate sauce
Ingredients for the Chunky banana coconut pancakes with chocolate sauce:
Pancakes
- 1 1/2 cup oats
- 1 cup Ecomil coconut milk sugar free
- 1 1/2 large banana
- Vegan cooking spray
Sauce
- 1 teaspoon cacao powder
- 1 teaspoon brown rice syrup (or any other syrup)
- 1/2 large banana
- 1/2 cup Ecomil coconut milk sugar free
Extras
- 1 cup raspberries
- 1 teaspoon desiccated coconut
Instructions:
Pancakes
- Blend the oats into an oat flour for 30 seconds or until a powder like texture is achieved
- Blend the oat flour with the coconut milk and 1 banana for around 1 minute to form the pancake batter
- Chop 1/2 banana into small chunks and mix into the pancake batter
- Place a frying pan onto the hob and spray with some vegan cooking spray, then spoon the pancake batter into circles, flipping after around 2 minutes (ingredient quantities given should make 4 small pancakes)
Sauce
- Blend the cacao powder, brown rice syrup, banana and coconut milk for 30 seconds to create chocolate sauce
Serve
- Dice raspberries into small chunks
- Stack the pancakes with the diced raspberries in between
- Drizzle chocolate sauce and sprinkle desiccated coconut on top of the pancake stack
