Cashew cream curry stew

Sarah @humbly_healthy prepared this quick and delicious cashew cream curry stew! Here’s the recipe. 


200 ml Ecomil Cuisine cashew

1.5 cups of a mix of carrots, spring onions, peas, green beans (the choice is yours!)

2 tbsp curry

1 tsp olive oil

1 finely chopped garlic clove (optional)

1 tbsp dried shallots (optional- but definitely adds taste too!)



1. Pre-heat the oven at 185C

2. Mix your ingredients in a bowl

3. Pour into an appropriate baking casserole or you can mix everything directly in your baking casserole.

4.Add the olive oil

5. Bake for 30mins at 185C and indulge with a side of brown rice or rice noodles or pasta.

Gotta have them carbs! ☺️ and of course our trusty fav, Monsieur ?.

Decorate as you prefer, here Sarah used almond flakes and a mix of seeds.
