Curry rice and vegetables

For two persons:

  • EcoMil cuisine coconut bio Tetra brik (200 ml)
  • 1 onion
  • 1 zucchini
  • 1 pepper
  • 2 carrots
  • 80 g of rice
  • Coconut oil
  • 2 teaspoons of curry
  • salt and pepper
  • and others seasonings of your choice

Preparation:

  1. Wash and cut the vegetables, and cook the rice
  2. Heat the coconut oil in the wok pan
  3. Add the onion ( low heat)
  4. Add the carrots and the pepper  with curry (increase the heat)Then, the zucchini a few minutes later.
  5. After 5-6 minutes, add the EcoMil cuisine coconut bio .
  6. Stir until well mixed and season
  7. Serve vegetables and rice mixed or separated.

 

Obviously, you can adapt this recipe: changing rice by potatoes, or adding turnip or eggplants for example.
