Curry rice and vegetables
For two persons:
- 1 EcoMil cuisine coconut bio Tetra brik (200 ml)
- 1 onion
- 1 zucchini
- 1 pepper
- 2 carrots
- 80 g of rice
- Coconut oil
- 2 teaspoons of curry
- salt and pepper
- and others seasonings of your choice
Preparation:
- Wash and cut the vegetables, and cook the rice
- Heat the coconut oil in the wok pan
- Add the onion ( low heat)
- Add the carrots and the pepper with curry (increase the heat)Then, the zucchini a few minutes later.
- After 5-6 minutes, add the EcoMil cuisine coconut bio .
- Stir until well mixed and season
- Serve vegetables and rice mixed or separated.
Obviously, you can adapt this recipe: changing rice by potatoes, or adding turnip or eggplants for example.
